Tea Melba’s Oranges & Berries


Melba’s Orchard Trifle

(serves 6)

There is nothing like a moulded jelly to deliver maximum impact for minimum input – especially a gloriously-rubied fruit tea jelly full of beautiful summer fruit.

5 tsp Melba’s Oranges & Berries Tea
7 gelatine leaves (titanium strength)
300ml elderflower cordial
125g punnet raspberries

Baked Apricots & Strawberries:
6 apricots
500g strawberries, hulled and cut in half
5 tbsp caster sugar
Juice of 1 lemon

60g unsalted butter, chopped
½ tsp vanilla bean paste
2 tsp honey
2 tbsp milk
1 large egg
55g caster sugar
75g self-raising flour
Pinch of salt

To serve:
600ml thickened cream
2 tbsp elderflower cordial
1 tbsp icing sugar
125g punnet raspberries
Store bought meringues
Edible flowers and freeze-dried raspberry powder (optional)

Dame Nellie Melba, one of the greatest opera singers the world has ever seen, burst onto the world stage in the late 19th century. Despite her fame, Melba always considered Melbourne home. Melba’s house & garden in the Victoria’s Yarra Valley was the inspiration for this botanical blend.

Melba’s Oranges & Berries is full of the flavours of an Australian country orchard. Apples, oranges & berries have been blended with Australian elderflower, creating a moorish & delicious fruit tea.

Enjoy hot or iced with seasonal fruit.
